Although I can /stash, /store, and /stock any given item(s), I cannot use /lock store, /lock stash, or /lock stock for any item(s). I am told that "You do not have that item," when trying to lock any items for storage.

Ah I see the problem, there is not suppose to be a space between the lock and stock/stash command... /lockstock and /lockstash with the item following. and there is no /lockstore.. its just /lock (item name)

I tried both ways, with and without the spaces. But anyway the /lock commands are working now for me. *shrugs*
